This is an extremely flexible and delicious recipe for your choice Chicken of the Woods finds. We’ll be cooking the KETO friendly and AIR FRIED version, but with only minor changes, this recipe can be made vegan, deep fried, pan fried, or any combination of the above. Chicken Nuggets of the Woods are great finger food for you and your friends!

Ingredients Required (KETO)
- Chicken of the Woods Mushrooms
- Pork Rinds
- Eggs
- Onion Powder
- Garlic Powder
- Salt
- Pepper
- Your Favorite Dipping Sauces

Step 1: Create the “Breading”
We use plain pork rinds and dump them into our blender.
- Pulse the blender until a coarse powder is formed.
- In a small bowl, mix the following:
- Coarse Pork Rind Powder
- Onion Powder (To Taste)
- Garlic Powder (To Taste)
- Salt (To Taste)
- Pepper (To Taste)
- Set aside mixture for breading step.
Note – I don’t have any measurements here because beyond the pork rinds, the extras are optional. You can add any spices/herbs in here to change how your breading tastes. Want spicy? Put some Cajun seasoning in here! Middle eastern style? Curry powder! This is where you can make this recipe your own.

Step 2: Slicing and Breading Mushrooms
- Slice mushrooms into nugget-sized pieces.
- Crack two eggs into bowl and beat thoroughly.
- Using the wet-hand + dry-hand method:
- Dip nuggets in egg wash with wet hand.
- Move egged nuggets to breading bowl.
- Toss or manually coat nuggets with breading using your dry hand.

Step 3: Cooking
- Place breaded nuggets into air fryer in a single layer
- Be careful to not over-crowd the basket.
- Repeat until basket and optional raised tray is full.
- Cook on 350 for 5 minutes.
- Flip all nuggets
- Cook on 350 for another 5 minutes.


Step 4: Enjoy!
Serve with your favorite dipping sauces!

- Replace eggs with egg replacer
- Replace pork rinds with standard bread crumbs.
STANDARD!
- Replace pork rinds with standard bread crumbs.
NO AIR FRYER?!
- VEGAN
- Fry in deep fryer or pan (Vegetable oil)
- NON-VEGAN
- Fry in deep fryer or pan (Any oil or beef tallow)
